GREENVILLE, S.C. — The chef behind Greenville’s Michelin-starred Scoundrel is getting ready to open a second restaurant, an Italian-leaning spot called Dootsie’s in the Village of West Greenville.

Joe Cash plans to open Dootsie’s in early December at 1233 W. Pendleton St. The building once held Red@28th and had been lined up for a restaurant named Take Care until those plans were dropped.

The name honors Cash’s grandmother, whose nickname it was, and her spaghetti will be on the menu. The room is meant to feel like a family dinner: only 77 seats, a kitchen open to diners and a pasta-making room walled in glass.

Cash grew up in Taylors and trained at the Culinary Institute of the Carolinas at Greenville Technical College. He cooked at Per Se in New York and at Noma in Copenhagen, then became executive chef at The Pool in Manhattan before coming home.

He founded Scoundrel downtown in 2022, pairing French technique with seasonal ingredients from local growers in a setting that borrows from Paris bistros and American steakhouses. It earned one Michelin star in 2025, Greenville’s first, and kept that star this month.
